Favourite Recipe…

Hello there again!

Thank you for coming back. So, now to my favorite recipe. My favorite food and the best thing ever is Jerk Chicken (I may be a bit biased considering my heritage). I have never prepared Jerk Chicken by myself, so I don’t know the recipe by heart.

However, I will be sharing the recipe for what is called Jamaican Toto. It is a bit similar (if not the same [as]) to Coconut Cake. This recipe I know by heart, and I am better at baking than cooking, so I might know what I am talking about.

It is also better for everyone’s safety if you know what I mean 😦.

Jamaican Toto

Ingredients:
2 cups grated coconut
1 cup sugar
2 cups flour
1/2 cup milk
1 beaten egg
1/2 lb melted butter
a bit of browning for coloring (optional)
vanilla for flavoring
2 tsp baking powder

Method:
1. Cream sugar and butter.
2. Sift together all of the dry ingredients in a bowl. Mix together and then add coconut.
3. Add creamed sugar and butter to the batter and mix until the coconut is evenly distributed. Add milk, vanilla, and egg. Mix until the dough makes a firm dough.
4. Add browning for a darker color if you wish. (This is optional).
5. Add to greased baking pan/tin. Bake for 1/2 hour at 350 degrees Fahrenheit or until a bit dry in the center. It should have a nice golden color without the browning.
6. Ready to serve.

It is truly yummy, and the best thing about it is that it has coconut which I like and it gives it a bit if a tropical feel.

This the best that I can do for now. I will do the Jerk Chicken recipe sometime in the future. Thanks for reading and let me know if there is a recipe you think I should try

Until next time…

Stay Fabulous
